Before being released by the Edmonton Oil Kings of the Western Hockey League, Soucy, an Alberta native, participated at the Triple-A midget level up until the age of 18.
After that, he participated in one season of junior A hockey with the Spruce Grove Saints of the Alberta Junior Hockey League, helping them win the regular season and playoff championships for the North Division in 2013 while doing so.
He was also a softball player during this time, playing outfield for Team Canada at the 2012 International Softball Federation World Junior Championship.

The Minnesota Wild finally selected him with the 137th overall pick. For two seasons, Parker MacKay, his cousin, joined Soucy in Minnesota.
After a four-year collegiate career, Soucy signed a two-year, entry-level deal with the Minnesota Wild on April 11, 2017.
For the balance of the 2016–17 campaign, he was then reassigned to the Iowa Wild, an American Hockey League (AHL) affiliate of the Wild.
Soucy was then granted access to the Minnesota Wild’s development camp, where Director of Player Development Brad Bombardir commended him for his performance there.

He played Edmonton that night in his NHL debut, recording three shots and two hits in 15:26 of ice time. Before being transferred to Iowa on April 6, he became the fifth player that season to make his NHL debut with the Wild.
Soucy underwhelmed at the Wild’s training camp the following year, and he spent the whole 2018–19 campaign in the AHL.
Soucy sustained an upper-body injury during this season, and a 2-4 week recovery period was predicted. Soucy agreed to a three-year, $8.25 million contract extension with the Wild on October 5, 2020.
